Sometimes breakfast for dinner is exactly what the doctor ordered, and when it comes in the form of fried potatoes, onions and red pepper smothered in eggs there is little that would make me more happy. This spanish tortilla might look complicated but it is super simple and works for breakfast, brunch or dinner so it is kinda the perfect meal. I added guacamole, cheese and sriracha to give elevate the dish just a touch and I would highly suggest you doing the same!
