Summertime meals should be two things; full of fresh vegetables and easy to prepare. This recipe, found one evening while searching for healthy summertime dinners, fit the bill. I’m usually not one to have a meatless meal, but I had a feeling it wouldn’t be missed in this dish. Prep for the meal was the most time consuming, but if you have helping hands the meal is quick, simple and tastes like it came straight from a ristorante in Italy.
