After purchasing this classic popsicle maker back in the spring I have been dreaming of different kinds of popsicle creations I could make.
I figured I would have made a million varieties of popsicles by now but up until this past weekend these yogurt pops were the only action my poor popsicle mould had seen. I’m really not sure why considering making popsicles takes little time and they are such a great (and healthy) grab and go snack. Whatever the reason for not making more popsicles I’ve now officially decided that I am going to keep my popsicle mould on the counter for the rest of summer to remind me to make more! Now, on to these delicious passion fruit popsicles. Passion fruit is undoubtably one of my favourite summertime flavours especially in a frozen treat, so when I stumbled upon passion fruit the other day while at Whole Foods I did a happy dance. I’d been looking for the tropical fruit everywhere to make cocktails with but it was nowhere to be found. Of course I found it when I wasn’t looking and I knew I needed to buy a few even if it wasn’t for cocktails. Although pricey, the small fruit packs so much delicious flavour which is perfect for a refreshing summer popsicle. When paired with the sweet coconut these passion fruit popsicles are the ultimate summer treat.
- 6 passionfruit
- 1 14oz can coconut milk
- juice of half a lime
- 1 tbsp honey
- In a blender combine all ingredients and blend until smooth. If you prefer not to have the seeds in your popsicles strain using cheese cloth or a mesh colander.
