Whenever we go out for dinner and I see that mushroom risotto is on the menu, you can bet that that’s what I will be ordering. Last year I made a simple parmesan risotto while Jamie made lamb for our anniversary dinner. And although I throughly enjoyed it, this time around adding mushrooms that have been sautéed in butter turned this dish up like ten notches. And Jamie, who normally hates mushrooms ate a huge portion of this delicious risotto.
