Since I have drastically cut down my meat consumption in the last few months I have been searching out alternatives to bar bites that I often tend to crave (with a beer…guilty pleasure). I have been seeing a ton of recipes where cauliflower is used as a substitute for meat because the vegetable can hold up to high temperatures and cooking times, and can be treated so many different ways. I’ve never been a big cauliflower person, but after seeing these “wings” and since I love me some Frank’s RedHot, I figured they would be worth a shot. The first time I made the bites was about a month ago and I immediately knew they were going to become a new staple in our house. I made them again for Oscar night and then once more this past weekend. These little guys are surprisingly the perfect alternative to chicken wings, take under an hour and they fully satisfy my bar bite cravings. Also, I am now a total cauliflower convert so how is that for a win-win!?
- cooking spray
- 3/4 cup all purpose flower
- 1 cup water
- 1/2 tsp garlic powder
- 1/2 tsp cayenne powder
- salt and pepper to taste
- 1 head cauliflower, chopped into bite size pieces
- 3/4 cups of Frank's Red Buffalo Sauce
- 2 tbsp butter
- Preheat oven to 450 degrees
- In a large bowl combine flower, water, garlic powder, cayenne pepper, salt and pepper and whisk until there are no lumps and a smooth, thick(ish) batter is left.
- Add chopped cauliflower to the bowl and mix it, making sure to coat the cauliflower completely.
- Transfer the cauliflower onto a greased pan and bake until lightly brown, about 20-25 minutes, flipping the cauliflower half way through.
- While the cauliflower is cooking heat butter and hot sauce in a small sauce pan until the butter is melted.
- Remove the cauliflower from the over and brush it with the hot sauce mixture. Transfer the cauliflower back into the over and let it bake for another 10 minutes.
- Remove the cauliflower from the oven and serve your buffalo bites with celery and ranch/blue cheese dressing.
