A Tablescape for Thanksgiving and 3 Fall Pumpkin Recipes

Fall is in the air and Thanksgiving is less than 2 weeks away, can you believe it!? This year I was feeling inspired to create an autumnal tablescape for Thanksgiving and fall in general (I’ve had my table set like this since the beginning of September and I’m still not sick of it!). I love creating seasonal and holiday table settings and when it comes to fall, I like to bring the outdoors inside. I was inspired by the colours of foliage and opted for a pumpkin spice/rust coloured table cloth as my base, stoneware dishes and gold flatware. The woven pumpkins were found at Homesense and all of the florals/foliage were found in my backyard (I love foraging…it’s free and you are able to get what is in season locally!). Aside from the tablescape which I hope has found you inspired to create your own (I’ve also linked lots of similar items below), I’ve made 3 recipes, all created with everyone’s favourite fall ingredient, pumpkin! There is a soup, hummus and pumpkin spice energy balls and they’re all delicious and would make the perfect addition to your Thanksgiving table. Everything is made using my Vitamix Ascent 3500 blender and family of Vitamix products which I highly recommend but you can use whatever you have at home to make these recipes. Enjoy!

Pumpkin Spice Energy Bites:

Ingredients:

  • ¼ cup pumpkin puree
  • 8 mejool dates, pitted. (soak in warm water for 10 minutes prior to using)
  • 1 cup old fashioned rolled oats
  • ¼ cup oven roasted walnuts or pecans
  • ¼ pepitas
  • ½ cup unsweetened coconut flakes
  • 1 tbsp chia seeds, hemp hearts or both
  • 1tbsp pure maple syrup
  • 1tsp pure vanilla extract
  • 2 tsp pumpkin pie spice
  • Pinch sea salt

For the Pumpkin Puree:

  • 1 sugar pumpkin
  • ½ tsp cinnamon
  • ¼ tsp salt
  • Olive oil to brush
  • Preheat oven to 425
  • Cut sugar pumpkin in half and remove the seeds
  • Place skin side up. Brush with olive oil and sprinkle with cinnamon, salt
  • Roast for at least 1 hour or until the pumpkin is soft
  • Remove skin from pumpkin and puree in Vitamix Ascent 3500 blender with food processor attachment

For the Pumpkin Spice Energy Bites:

  • Add soaked dates into the Vitamix Ascent 3500 blender with food processor attachment. Pulse until dates are broken up and you can form a sticky ball
  • Add the remaining ingredients Into the food processor and pulse until combined (you don’t want your ingredients to be fully broken down)
  • Line a tray with parchment paper and roll balls using 1-2 tbsp of the mixture
  • Transfer balls to the refrigerator. 
  • You can store these in an airtight container for up to 2 weeks
